BBQ Spice Vegetarian Meatballs

Our BBQ Spice Rub is a popular choice for all the meat and grilling enthusiasts out there... but that doesn't mean it can't be a hit with vegetarians, too!

This spice blend is versatile and can work in any number of ways (with tofu, mixed in with rice, meatloaf, meatballs) and in this recipe it livens up a blend that is mainly quinoa and beans. These protein-packed meatballs are sure to be a hit with vegetarians and meat-eaters alike!

 

 

BBQ Spice Vegetarian Meatballs

(makes about 35 small meatballs)

  • 1 cup beans (black beans, cannellini, or red kidneys beans recommended)
  • 1/2 cup quinoa
  • 1 cup breadcrumbs
  • 1/4 cup grated parmesan
  • 1 small onion, finely diced
  • 1 egg
  • 1 tbsp olive oil
  • 1 tbsp South Shore Sea Salt's BBQ Spice Rub
  • extra sea salt to taste
  1. Cook the quinoa as directed. Cook the beans separately until very soft.
  2. Finely chop the onion and saute until golden. Let all cooked elements cool.
  3. Preheat the oven to 400 degrees F.
  4. In a mixing bowl, add breadcrumbs, cheese, oil, and seasonings. Stir to combine.
  5. Add the cooled quinoa, beans, and egg. Stir very well to combine - aim for a wet but moldable consistency.
  6. Roll into balls and place on a lined baking sheet
  7. Bake for 20 minutes.
  8. Serve with dipping sauce or use as meatballs in a pasta dish.
